Aji to Spice up your Favorite Dish
Aji or Peruvian hot Pepper is definitely one of my most favorite spices. Hotter than jalapeno but not quite as intense as Habanero chili, Aji has this fruity flavor which suits most of local Peruvian fish. It is one of the primary ingredients in making a Huancaina sauce which is usually served alongside potatoes and lettuce.
Tiradito is a famous Peruvian dish also served with Aji. A fish is being marinated in lemon juice and aji sauce for a period of time. If you want to give this dish a little twist, you could actualy put mango chutney and have a pleasing result.
